Banana Bread Granola

Ingredients
• 1 ripe banana (mashed)
• 1 tbsp melted coconut oil or olive oil
• 1 tbsp maple syrup
• 1 tsp vanilla extract
• 2 cups rolled oats
• 2-3 tbsp seeds (sesame, hemp, sunflower…)
• 1/4 cup crushed nuts (cashews, almonds, pecans…)
• 1/2 tsp cinnamon
• 1/4 tsp salt
• 1/4 cup dark chocolate chips
Instructions
1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
2. In one large bowl, mash the banana.
3. Stir in oil, maple syrup, and vanilla.
4. Add oats, seeds, nuts, cinnamon, and salt. Mix well.
5. Spread the mixture evenly on the baking sheet and press down gently for clumps.
6. Bake for 35–40 minutes, until golden and crisp at the edges. Don’t stir during baking.
7. Let cool completely, it will crisp up as it cools.
8. Once fully cool, break into chunks and stir in dark chocolate chips.
