Nutty Apple Cake

Low sugar, gluten free, guilt free but so good.


Ingredients:

  • 2 cups almond flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 2 large eggs

  • 1/2 cup coconut sugar

  • 1/4 cup coconut oil, melted

  • 1 teaspoon vanilla extract

  • 2 apples, peeled and diced

  • 1/3 cup chopped walnuts


Directions:

  1. Preheat oven to 375 F

  2. In a medium bowl, whisk almond flour, baking soda, cinnamon, and salt

  3. In a large bowl, beat eggs, coconut sugar, coconut oil, vanilla

  4. Add dry into wet and combine

  5. Fold in apples, pour batter into lined round cake pan

  6. Top with chopped walnuts

  7. Bake for 30-35 minutes or until toothpick comes out dry
