Orange Olive Oil Cake

Ingredients:

  • 3/4 cup coconut sugar

  • 3/4 cup olive oil

  • 4 eggs

  • 3/4 cup plant milk

  • 1/4 cup fresh orange juice

  • zest of 2 oranges

  • 2 tsp vanilla

  • 2 cups blanched almond flour

  • 1/4 cup arrowroot or tapioca starch

  • 1 tsp baking soda

  • 1 tsp salt


Orange Cashew Icing:

In a food processor, blend until smooth:

  • 1/2 cup cashews, soaked in boiling water at least 10 minutes

  • 1/4 cup fresh orange juice

  • zest of 1 small orange

  • 1 tbsp maple syrup (optional)

  • add water or plant milk as needed for consistency


Directions:


  1. Preheat oven to 350 F

  2. Whisk together sugar and olive oil

  3. Add remaining wet ingredients and mix

  4. Stir in dry ingredients

  5. Pour into a line or greased pan

  6. Bake around 30 minutes until a toothpick comes out clean

  7. Allow cake to cool, then ice and serve
