Orange Olive Oil Cake

Ingredients:
3/4 cup coconut sugar
3/4 cup olive oil
4 eggs
3/4 cup plant milk
1/4 cup fresh orange juice
zest of 2 oranges
2 tsp vanilla
2 cups blanched almond flour
1/4 cup arrowroot or tapioca starch
1 tsp baking soda
1 tsp salt
Orange Cashew Icing:
In a food processor, blend until smooth:
1/2 cup cashews, soaked in boiling water at least 10 minutes
1/4 cup fresh orange juice
zest of 1 small orange
1 tbsp maple syrup (optional)
add water or plant milk as needed for consistency
Directions:
Preheat oven to 350 F
Whisk together sugar and olive oil
Add remaining wet ingredients and mix
Stir in dry ingredients
Pour into a line or greased pan
Bake around 30 minutes until a toothpick comes out clean
Allow cake to cool, then ice and serve
