Billionaire Bars

My all time favourite dessert. You're welcome.


Shortbread:

2 cups almond flour

2 tbsp coconut oil

2 tbsp maple syrup

Pinch salt


Date caramel:

12 medjool dates, soaked in boiling water

1 tbsp tahini

1 tsp salt

Plant milk or water to blend


Chocolate:

1 cup chocolate chips

1 tbsp coconut oil


  1. Combine shortbread ingredients, bake at 350 F for ~10 minutes

  2. Soak dates in boiled water for 10 minutes

  3. Combine caramel ingredients in food processor, adding water or almond milk as needed till smooth

  4. Spread caramel over cooled shortbread layer

  5. Melt chocolate and coconut oil together, spread carefully on top of caramel

  6. Top with flaky kosher salt if desired
