Luteal Phase Creamy Beet Pasta

Sauce:

  • 1 cooked beet (steamed or boiled)

  • 1/2 cup cashews (softened in hot water)

  • 1/4 cup nutritional yeast

  • 2 cloves roasted garlic, or garlic powder

  • 1 tsp salt

  • 1 tbsp tahini

  • Water or almond milk, as needed to blend


Pasta:

  • 1 box Chickpea pasta

  • 1 head broccoli

  • Optional: fresh parsley


Directions:

1. Soften cashews for at least 10 mins in boiled water

2. Chop broccoli and saute on stove in large pan

3. Cook chickpea pasta

4. Blend all sauce ingredients

5. Add pasta and sauce to broccoli

6. Serve with fresh parsley
