Pumpkin Spice Blondies

The coziest fall vibes in a baked good.


Ingredients:

  • 1 cup pumpkin puree

  • 1 egg

  • 2 teaspoons vanilla extract

  • 1.5 cups almond flour

  • 1/4 cup arrowroot flour

  • 1 teaspoon baking soda

  • 1.5 teaspoon cinnamon

  • 1/2 teaspoon ginger

  • 1/4 teaspoon allspice

  • 1/4 teaspoon salt


Topping :

  • 1 tablespoon coconut sugar

  • 1 teaspoon cinnamon


Directions:

  1. Preheat oven to 350 F

  2. Combine wet ingredients, then add dry and mix

  3. Pour into 8x8 baking dish

  4. Sprinkle 3/4 of the cinnamon sugar mix evenly over top, use a sieve

  5. Bake around 20 minutes until a toothpick comes out dry

  6. Sprinkle remainder of the cinnamon sugar mix after baking.
