Warm Kale Salad

Makes 3-4 servings:


Salad Ingredients:

  • 1 bunch of kale, steamed

  • 1 block extra-firm tofu

  • 2 sweet potatoes

  • 1 avocado

  • Avocado oil

  • Paprika

  • Garlic powder

  • Salt + pepper

  • Pumpkin seeds, dry toasted on stove


Maple Dijon dressing:


  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar (or white vinegar)

  • 1 tsp Dijon mustard

  • 1 tsp maple syrup

  • Salt & pepper to taste


Directions:

  1. Chop sweet potatoes into cubes, toss in oil salt + pepper

  2. Chop tofu into cubes, toss in oil, paprika, garlic powder, salt + pepper

  3. Bake both at 425 F for 30-40 minutes (the sweet potatoes may need longer than the tofu)

  4. Assemble bowls with steamed kale, roasted tofu/pot, fresh avocado, toasted pumpkin seeds, and a drizzle of dressing
