Warm Kale Salad

Makes 3-4 servings:
Salad Ingredients:
1 bunch of kale, steamed
1 block extra-firm tofu
2 sweet potatoes
1 avocado
Avocado oil
Paprika
Garlic powder
Salt + pepper
Pumpkin seeds, dry toasted on stove
Maple Dijon dressing:
2 tbsp olive oil
1 tbsp apple cider vinegar (or white vinegar)
1 tsp Dijon mustard
1 tsp maple syrup
Salt & pepper to taste
Directions:
Chop sweet potatoes into cubes, toss in oil salt + pepper
Chop tofu into cubes, toss in oil, paprika, garlic powder, salt + pepper
Bake both at 425 F for 30-40 minutes (the sweet potatoes may need longer than the tofu)
Assemble bowls with steamed kale, roasted tofu/pot, fresh avocado, toasted pumpkin seeds, and a drizzle of dressing
