Tofu Schnitzel

Ingredients:

  • 2 blocks extra firm tofu

  • 1/4 cup cornstarch or arrowroot starch

  • 1/2 cup almond milk

  • 1 tsp Dijon mustard

  • 1 cup breadcrumbs (I used GF)

  • 1 tsp oregano

  • 1 tsp parsley

  • 1 tsp paprika

  • 1 tsp garlic powder

  • Salt + pepper to taste

  • Avocado oil for frying


Directions:

  1. Slice tofu into desired shnitzel shape

  2. Set up 3 shallow dishes: cornstarch + salt + pepper / almond milk + Dijon mustard / breadcrumbs + spices

  3. Coat each tofu piece in each mixture starting with cornstarch then almond milk then breadcrumbs

  4. Pan fry on medium-high heat for a few minutes until golden and crispy then flip
