Tofu Schnitzel

Ingredients:
2 blocks extra firm tofu
1/4 cup cornstarch or arrowroot starch
1/2 cup almond milk
1 tsp Dijon mustard
1 cup breadcrumbs (I used GF)
1 tsp oregano
1 tsp parsley
1 tsp paprika
1 tsp garlic powder
Salt + pepper to taste
Avocado oil for frying
Directions:
Slice tofu into desired shnitzel shape
Set up 3 shallow dishes: cornstarch + salt + pepper / almond milk + Dijon mustard / breadcrumbs + spices
Coat each tofu piece in each mixture starting with cornstarch then almond milk then breadcrumbs
Pan fry on medium-high heat for a few minutes until golden and crispy then flip
