Sweet Potato Sliders

Lean beef sliders with a sweet potato bun. Clean, lean, weeknight dinner!
Ingredients:
1lb lean ground beef
2 sweet potatoes
1 tablespoon Avocado oil
Salt + pepper to taste
optional toppings: bbq sauce, ketchup, pickles, onions...
Directions:
Preheat oven to 425 F
Chop sweet potatoes into 1 inch circles
Toss in avo oil, salt, pepper and arrange in a single layer on a baking sheet
Bake for ~40 minutes, flip halfway, until lightly golden on the outside and soft on the inside
While the potatoes are roasting, prep the sliders:
Combine lean ground beef with kosher salt + pepper
Shape into 10 mini burgers (sliders)
Pan fry or grill until cooked through, flip once
Assemble burgers using the sweet potato rounds as a bun!
