Sweet Potato Sliders

Lean beef sliders with a sweet potato bun. Clean, lean, weeknight dinner!


Ingredients:

  • 1lb lean ground beef

  • 2 sweet potatoes

  • 1 tablespoon Avocado oil

  • Salt + pepper to taste

  • optional toppings: bbq sauce, ketchup, pickles, onions...


Directions:

  1. Preheat oven to 425 F

  2. Chop sweet potatoes into 1 inch circles

  3. Toss in avo oil, salt, pepper and arrange in a single layer on a baking sheet

  4. Bake for ~40 minutes, flip halfway, until lightly golden on the outside and soft on the inside

  5. While the potatoes are roasting, prep the sliders:

    1. Combine lean ground beef with kosher salt + pepper

    2. Shape into 10 mini burgers (sliders)

    3. Pan fry or grill until cooked through, flip once

  6. Assemble burgers using the sweet potato rounds as a bun!
