Sweet Potato Kugel

As a classic potato kugel lover, this sweet potato version did not dissapoint! It's a savoury dish with a touch of sweetness, extra nutrients from the sweet potatoes, and a little lighter on oil and salt so you don't feel super heavy after eating it.


Ingredients:

  • 5 sweet potatoes

  • 1 onion

  • 1 zuchini

  • 6 eggs

  • 1/3 cup avocado oil

  • 1/2 cup water

  • 1 tablespoon salt

  • 1.5 teaspoon black pepper


Directions:

  1. Preheat oven to 500 F

  2. Pulse all veggies in a food processor until finely shredded

  3. Combine eggs, oil, salt, + pepper in a large mixing bowl

  4. Add in pulsed veggies and combine

  5. Spread kugel in an even layer in a deep baking tray

  6. Bake for 45-60 minutes at 500 F

  7. Lower heat to 250 F and continue baking for 2-4 more hours
