Quick Pickled Onions

For when your meal needs a pop of pink.
Ingredients:
3 red onions
1.5 cups white vinegar
1.5 cups boiling water
2 teaspoons salt
1 teaspoon sugar ( I use honey, maple syrup, or coconut sugar)
Directions:
Combine all ingredients in a large container or jar
Let sit at room temperature for 30 minutes
Eat right away or let sit in fridge for at least 24 hours for best taste
