Potato Kugel

Ingredients:
5 russet potatoes
1 onion
1 zuchini
6 eggs
1/3 cup avocado oil
1/2 cup water
1 tablespoon salt
1.5 teaspoon black pepper
Directions:
Preheat oven to 500 F
Pulse all veggies in a food processor until finely shredded
Combine eggs, oil, salt, + pepper in a large mixing bowl
Add in pulsed veggies and combine
Spread kugel in an even layer in a deep baking tray
Bake for 45-60 minutes at 500 F
Lower heat to 250 F and continue baking for 2-4 more hours
