Lemon Coconut Loaf

Moist, lemony, and just the right amount of sweet.


Loaf Ingredients

  • 2 cups blanched almond flour

  • 1/2 cup unsweetened coconut flakes

  • 1 tsp baking soda

  • 1/4 tsp salt

  • zest of one lemon

  • 1/2 cup lemon juice (2-3 lemons, juiced)

  • 3 eggs, room temperature

  • 1 tsp pure vanilla extract

  • 1/4 cup maple syrup

  • 1 tbsp coconut oil, melted


Glaze Ingredients

  • 2 tbsp tahini

  • 2 tbsp maple syrup

  • zest of one lemon

  • juice of 1/2 lemon


  1. Preheat oven to 350 F, grease or line loaf pan

  2. In a large bowl, combine all dry ingredients (first 4)

  3. In a small bowl, combine all wet ingredients (last 6)

  4. Add wet ingredients to dry and mix until combined

  5. Pour into loaf pan and bake for 30-35 minutes or until sides are browned and a toothpick comes out clean

  6. Combine glaze ingredients, let loaf cool completely, add glaze and sprinkle with more shredded coconut.
