Lemon Coconut Loaf

Moist, lemony, and just the right amount of sweet.
Loaf Ingredients
2 cups blanched almond flour
1/2 cup unsweetened coconut flakes
1 tsp baking soda
1/4 tsp salt
zest of one lemon
1/2 cup lemon juice (2-3 lemons, juiced)
3 eggs, room temperature
1 tsp pure vanilla extract
1/4 cup maple syrup
1 tbsp coconut oil, melted
Glaze Ingredients
2 tbsp tahini
2 tbsp maple syrup
zest of one lemon
juice of 1/2 lemon
Preheat oven to 350 F, grease or line loaf pan
In a large bowl, combine all dry ingredients (first 4)
In a small bowl, combine all wet ingredients (last 6)
Add wet ingredients to dry and mix until combined
Pour into loaf pan and bake for 30-35 minutes or until sides are browned and a toothpick comes out clean
Combine glaze ingredients, let loaf cool completely, add glaze and sprinkle with more shredded coconut.
