Did you know that apples release a soluble fiber called pectin when they're stewed? Your gut bacteria will love you for making this recipe. I like to make a batch at the start of the week to add to chia pudding, oats, or eat as dessert.
Ingredients:
2-3 apples
1-2 tsp maple syrup
1/2 lemon, juiced
2 tsp cinnamon
pinch of salt
2-3 tbsp water
Directions:
Chop apples into small cubes
Combine with 2 tbsp water, 1 tsp maple syrup, juice of half a lemon, cinnamon, and salt in a pot on the stove over low-medium heat.
Stew for ~10-30 minutes (depending how soft you want it) stirring occasionally.
