Edamame Cilantro Hummus

Is it still hummus if it doesn't have chickpeas? This edamame-based dip is bright, flavourful, and a unique addition to your plate when you're tired of hummus.


Ingredients:

  • 2 cups edamame beans (shelled), i used frozen and boiled them 5 mins

  • 1 cup loosely packed cilantro

  • 1 tbsp olive oil

  • 1/2 tbsp honey

  • 1 lime, juiced

  • 1/4 cup tahini

  • 2 cloves of garlic, roasted or pan fried for a few minutes

  • salt to taste

  • 1/4 cup water, adjust as needed for desired consistency


Directions:

  • Combine all ingredients in a food processor and pulse until blended

  • Add water as needed for desired consistency
