Creamy Soy-Ginger Tofu

Perfect quick weeknight meal!
Ingredients:
1 block extra-firm tofu
1 tbsp oil
2 garlic cloves, minced (or 1 tsp garlic powder)
1 inch fresh ginger, grated (or 1 tsp ground ginger)
1 can light coconut milk (use full fat for extra creamy)
2 tbsp tamari or soy sauce
1/2 tbsp maple syrup or honey
2 tsp rice vinegar
2 sprigs green onions
1 onion
1 pepper
1 zuchini
Directions:
Chop tofu into cubes, pan fry until lightly crispy, set aside
Slice + Saute onion, pepper, and zucchini until softened and starting to brown
Add the white crunchy part of green onion (sliced), garlic, and ginger. saute 2 more minutes
Add remaining ingredients (except green soft part of the green onion) into the pan and bring to a boil
Reduce heat and simmer uncovered for 5-10 minutes until sauce thickens
Add in tofu
Serve over rice or as is, top with fresh green onion
