Creamy Soy-Ginger Tofu

Perfect quick weeknight meal!


Ingredients:

  • 1 block extra-firm tofu

  • 1 tbsp oil

  • 2 garlic cloves, minced (or 1 tsp garlic powder)

  • 1 inch fresh ginger, grated (or 1 tsp ground ginger)

  • 1 can light coconut milk (use full fat for extra creamy)

  • 2 tbsp tamari or soy sauce

  • 1/2 tbsp maple syrup or honey

  • 2 tsp rice vinegar

  • 2 sprigs green onions

  • 1 onion

  • 1 pepper

  • 1 zuchini


Directions:

  1. Chop tofu into cubes, pan fry until lightly crispy, set aside

  2. Slice + Saute onion, pepper, and zucchini until softened and starting to brown

  3. Add the white crunchy part of green onion (sliced), garlic, and ginger. saute 2 more minutes

  4. Add remaining ingredients (except green soft part of the green onion) into the pan and bring to a boil

  5. Reduce heat and simmer uncovered for 5-10 minutes until sauce thickens

  6. Add in tofu

  7. Serve over rice or as is, top with fresh green onion
